According to Betty Crocker, you can substitute (in most cases) 2 egg yolks for 1 egg. I use an egg substitute such as Egg Beaters insteat. If you are allergic to eggs, I wouldn't use them because they are made with 99% egg whites. The other 1% isn't mentioned. Good question for Wikianswers.

Usually, you can take half of the amount of water mentioned on the box, and replace it.with milk (example: recipe calls for 1/2 cup water, use 1/4 cup water, 1/4 cup milk) and if eggs are needed, use just the egg whites, and use one more egg than it calls for (example: recipe.calls for 2 eggs, instead you use 3 egg whites) also adding 3-5 tablespoons of self rising flour helps a lot.
You can substitute 1/4 cup coconut milk for every egg. But be careful of overwhelming the brownies with coconut flavor, unless you like coconut. Puree 1 tablespoon of flaxseed with 1/4 cup water per egg. This helps to bind ingredients like eggs do. Or you can try a 1/4 cup of applesauce per egg. All of these substitutions are vegan!
