according to Jamie Oliver's, "The Naked Chef" book, you should cook your pork internally at around 80 - 85 degrees for 40 minutes. ITS THE ONLY WAY.
For medium pork, the internal temperature should be 140 to 145 degrees F.

I will always cook a pork roast or loin till it reaches an internal temperature of 190 degrees.

Most say 160 but i like to go to 165.
