∙ 15y agoaccording to Jamie Oliver's, "The Naked Chef" book, you should cook your pork internally at around 80 - 85 degrees for 40 minutes. ITS THE ONLY WAY.

For medium pork, the internal temperature should be 140 to 145 degrees F.
Cook to 170 degrees,
Internal temperature of pork needs to reach 145° to kill bacteria, so I would cook it to 140° and let it rest 15 minutes to reach an internal temperature of 145°
165 degrees
Boneless pork ribs are done when they reach an internal temperature of 145°F (63°C) as measured with a meat thermometer. This is the safe minimum temperature recommended by the USDA for pork.
I will always cook a pork roast or loin till it reaches an internal temperature of 190 degrees.
Continue roasting until the internal temperature of the pork roast as 160°F. You will nee a meat thermometer for this.

until there is no more pink color in the middle
Most say 160 but i like to go to 165.
Pork chops should be baked for 45 minutes, in a convection oven, at a temperature of 325°. Pork chops should not be considered done until the internal temperature is a minimum of 165°.
