Most BBQ joints have their own which was developed after many years of testing.

It depends where in the world you are.

Round Kansas City, the thick, sticky BBQ sauce is based on tomato sauce and flavoured with sugar, Worcestershire sauce, cayenne, paprika and cider vinegar. I think this is what most people round the world think USA style barbecue sauce is like.

But worldwide it varies hugely from place to place. In South Carolina gold sauce they base it on mustard. In North Carolina sauce they use a lot of Cider vinegar with cayenne or Tabasco. In France they might go for persillade made with olive oil and parsley. In the Far East char siu is made with rice wine and hoi sin sauce flavoured with honey and five spice powder.
