While in college I work in a place where I had to make milkshakes and each time I used it I ran hot water in the metal cup before using it again. You just put it up into the machine like you do for a milkshake but with water and not milk. This takes the leftover milk off the machine. Every night I emptied and cleaned the soft serve machine. I would take it apart, wash the parts, lay them out on a clean towel and cover them. The ice cream/milkshake mix would be emptied into a bucket to be reused the next day and stored in the walk in box overnight. This was done before cleaning.

It has to be cleaned every so often, mainly if you can see that it is dirty than you should clean it. And it really should be cleaned every 4-5 weeks.
