I cover the pot and let it get back to boiling, then I reduce the heat and let it slowly boil for at LEAST four hours. The trick is to get it to boil without having the lid flapping. If you have the time, six hours is even better. The chicken will be falling apart because everything is cooked out of it into the broth. My family LOVES to eat the chicken that I separate from the broth. It is very tasty from all the spices. The celery and onion all but vanishes from cooking so long. It makes a very rich broth.
