Over a charcoal fire the best way is on a plank of wood. You can buy them at William Sonoma year round and at most grocery stores during spring summer and fall. Start a bed of coals and at the same time soak the plank of wood; cedar, alder, maple, cherry, etc., are good with fish; hickory and oak make light meat like fish taste like sausage. Cedar can be overbearing as well with less oily fish. Wash and pat dry the fish. Center the fish on the plank. When coals turn white spread them evenly over the bottom of the grill approximately two deep. Place the plank on the grill centered over the very hot coals and cover the grill with the lid. Weber Grill is the best grill for cooking this and all other cooking methods using charcoal. Do not worry about burning the fish. The fish will not burn only the bottom of the board will be burnt. Cook covered for 15 to 20 minutes depending on the size of the fish and assuming you are using a standard size plank i.e. William Sonoma. Remove plank (with fish on) from the grill using a tong and spatula. Do not bring plank indoors. The bottom of the plank is smoldering embers and will be hot. Using a spatula loosen all edges of the fish from the plank surface by slicing under the fish with the spatula. Remove the fish from the plank outdoors by resting one end of the plank on the serving plate and holding the other end with a tong. Tilt the board and slide the fish off the plank using the spatula. You'll notice I said nothing of seasoning or adding oil to the fish. I have found that they only obscure the true flavors of the meat and wood flavor. Try one with no seasoning and then add what you think is missing on the second one. You'll be cooking with no additives on the third. You can always dress up the fish on the serving plate by adding green leafy garnishes and lemon wedges.

why would you cook pizza in the grill? if your going to do that then you should cook it by the instructions, close the lid and check it often. doing it that way will probably burn the bottom though.
