The cocoa beans are separated into their differnt contents, most important in this case the cocoa butter and the cocoa powder. The cocoa powder is what holds the brown color. Leave the cocoa powder out of the mix, and you get white chocolate.

Powdered Cocoa is a powder made from cacao seeds after they have been fermented, roasted, shelled, ground, and freed of most of their fat. It is used mostly in baking and making fudge, but can be used to make hot chocolate. Cocoa Mix is this mixture of cocoa powder, dry milk and sugar. It is combined with cold or boiling water to make a cold or hot, chocolate-flavored beverage.
Cocoa powder is made from roasted and ground cacao beans, which are the seeds of the fruit of the cacao tree. The beans are fermented, dried, roasted, and then processed to extract the fat (cocoa butter), leaving behind the cocoa solids, which are then ground into a fine powder.

I haven't really heard of fudge being made with vinegar. But a simple one I know is with cocoa powder, marshmallow fluff, and powdered sugar. You can add in some melted chocolate or peanut butter, too.
Bittersweet, semisweet, and dark chocolate make good truffle centers, while cocoa powder, dark chocolate powder, or unsweetened cocoa powder make great outside powder coverings for the truffles.
