Because the copy & paste functions on a computer are primarily designed to move text around a document. For example - suppose I wanted to change the way the text is written in this answer, I could use the copy & paste functions to rearrange the text to a new order.

Text manipulation is just changing text in any way, be that the actual letters, or formatting or alignment etc. It is what word processing is for. Anything you do with text in a document is manipulating it.

HTML text isn't really formatted to begin with. But if you want to create text that is formatted in the exact way you typed it into the document, you can surround that text with a <PRE></PRE> element.
The only way I have figured out to save an email to your hard drive is, cut and paste the text into a text document and save.
You may be referring to the Document Map. This can help you to find text, but there are other ways of doing that. You could use the Find command. Pressing Ctrl - F will start it. The Document Map is more for helping to navigate through a document. This is particularly the case when bookmarks and other kinds of significant points in the document have been defined.
It is treated the same way as what the text between title tags is in a HTML document. It will appear in the title bar. It is not the actual name of the file.
jpeg files can't be converted to *.doc files, microsoft word is a word processing tool, not an image editor, but you can insert the image via the insert menu, and centering it and/or if it has a high resolution making it as big as the page itself.
