A MacBook Pro comes with Java installed (See links below). Run Software update from the Apple menu to see if any updates are available.
New Macs all have the same software installed. If you are referring to Garageband (See links below) then yes both the MacBook and MacBook Pro have it installed.
MacBook Pro does not come with eSATA support. If you have MacBook Pro with ExpressCard support, you can get adapter which would allow you to use eSATA. Note: Latest MacBook Pro laptops do not come even with ExpressCard support. Firewire is the fastest available option right now (2010).

it sort of seems like for the last two years or so the macbook pro updates has been steady in update interval pairs. for example, from 2007-2010, apple updated the macbook pro on an average interval of 8 months. the last update was April 13th of 2010, and since then, it has been 9 months. the update before the April one was also a 10 month wait, so by the pattern of nearly twos, i would think that the update was coming around February.
