"GUI" is a term for a user interface paradigm where objects are represented graphically with icons, and often use windows and mouse pointers. MS-DOS is an operating system, one of many that does not use a GUI by default.

A Text Based OS is a OS like MSdos just plain old text and commands But Now Newer Operating Systems Came Out. A GUI OS is like mac, Windows 7, But Boots With a little help from MSdos. You can still download linux text based OSs But It is mosty meant for servers.

It depends on what you are wanting to do. C is a very powerful and fast language. Visual C provides the same capabilities but also gives you built in functionality to easily create a GUI. If you don't need the GUI, conventional C is just as good.
