In US measure: 1 quart = 4 cups and 1 cup = 0.25 quart.

There are 32 US fluid ounces (2 pints or 4 cups) in 1 US quart (946.4 ml).

There are 40 Imperial fluid ounces (2 pints) in 1 Imperial quart (1,136 ml).

Note that there is no 'cup' in the Imperial system, it is best to use pints or half pints,

Let's start with a few basics. Are you dealing with canned product or raw "Cucurbita Mixta" ?

If its canned product just measure out the weight you need for recipe since commercial preparations can have some variance in water content (they are processed to flow well into the can and have recognizable color, beyond that they don't have much criteria)

If your starting with raw fruit, Yes it is a fruit since it is the seed bearing body of a flowering plant, water content once again comes into the equation but this time you can make a reasonable guess.

We know that H2O weights a little over 8 pounds per gallon.

We know a fresh pumpkin is 70% water.

We know a cup is .0625 of a gallon.

The other veg fiber, trace minerals ect... in a pumpkin are not significant to this calculation.

8.25 x .0625=.515625

Therefore

1 cup of water weighs just over a half pound.

applying our 70% factor (which by the way assumes your pumpkin has had some time in shipping, storage or on a retail shelf somewhere)

.515625 x .70 =.36 of a pound per cup of pumpkin flesh.

looks like you need almost 3 cups of pumpkin to get a full pound

call it 2 and 7/8 cups if you have to get that delicate with it.
