To run Windows Compatibility Troubleshooter wizard, type in Action Center in Start menu search box and hit enter. Then in the left pane of the Action Center, click on the link labeled Windows Compatibility Troubleshooter to start the troubleshooting wizard.
Microsoft included a "Program Compatibility Wizard" with Windows XP for this very purpose. It won't work for all of your games and programs, but it should help with some of them. Just right-click either the desktop icon or start menu shortcut for the particular program, and go to "Properties". As long as it's an executable or a shortcut to one, you should see a "Compatibility" tab. You can change the settings for the individual program there, or follow a link to the help file on how to use the wizard.

I don't know if you can restore the "Opens With" wizard, but you can change the program that opens files of that extension. Right-click on the file and select "Properties". The properties window will show what program opens that extension, and allow you to change it.

Generally speaking, any game that work on XP should work fine on Vista as well. There are a few games that have compatibility issues, however. MS Vista also has an option to run any program in compatibility mode (Windows XP compatibility). This helps for some programs which have compatibility issues. For any program or program short cut, right click and go to properties, compatibility to look for this option.
