You replace the brakes on an ABS S10 the same way you replace brakes on a non ABS S10.
That is the ABS in operation.

You could remove the abs fuse located under the hood in the power distribution center, but keep in mind the abs light will remain on and the abs system will not function if needed.
Every time you start and drive the vehicle the abs self tests itself. If there was a problem with the abs, the abs light would stay on until it is fixed. Also when the abs light stays on the abs system will not function.
The abs light is on because there is a problem with the system. Until the problem is fixed it will remain on. Once it is fixed the light will reset itself.
An S10 is the same as a Chevy S10.
get your rotors turned. If it's the ABS turning on or off you might need a new sensor for the wheel. The S-10 ABS had a design flaw and the ABS sensors on the wheel sometimes break.
