Rats will appear to eat almost anything. But with items like boxes, or even printer ink cartridges in your printer, they will tear things apart with their mouth to build nesting materials, or even because they sense the possibility of water inside something. They are extremely destructive as they go about their lives. From a food perspective they will eat pretty much anything a human eats, but will chew their way through a great deal of material to get what they are after. And of course, they rip and shred cloth and paper to build nests. They are also known to "eat" wiring in houses.
