You're not supposed to pour concrete below 40ºf
There additives you can use in cold weather, and as concrete generates it's own heat as it cures, you can cover it with something insulative if it gets real cold.
We've poured footings and foundations when the temp was in single digits, but you'll need to add the special "antifreeze".
