Oxygen is a very strong oxidizing agent and is reduced very readily. In organisms that use cellular respiration to generate energy (e.g. humans), oxygen is needed at the end of the electron transport chain to act as electron acceptors, producing water in the process. Without oxygen, the electrons will not leave the electron transport chain, stalling it and forcing the cell to compensate with anaerobic respiration, which is much less effective and can only satisfy the needs of the cells for a short time.
