Because a hormone testosterone secreted only in males is also responsible for stimulation of hormone erythropoetin secreted from kidneys. Erythropoetin is responsible for synthesis of rbcs. So males have higher hematocrit than that of females.

this is due to 2 reasons-

1-females have a hormone estrogen-which has an inhibitory effect on erythropoetin-a hormone essential for erythropoeisis.

2- in males,the testosterone has an accelerating effect on erythropoetin..thereby increasing the rbc count slightly.

It is because a woman menstruates.  A normal haemoglobin count for women is about 12 to 14, whereas the normal count for a man is from 14 to 16.
