I'm 6'6" and found the Highlander to be the most comfortable car. The driving position was great, and the arm rests and foot well seemed almost designed for taller drivers. Also, Consumer Reports once listed it as one of the best models for families with both tall and short drivers. It's that adjustable.
Also check out the Toyota Rav4 (2006-present) and the Honda CR-V (2006-present) and Element. These models are more narrow vehicles, but offer comparable headroom. The element offers and incredible 43.3 inches of headroom.
I found, however, that the foot well for many of these other cars was too narrow, despite the advertised hip room.
Whichever model you get, make sure you avoid a sun/moon roof. Sun roofs actually take the height of the car down about 2-3 inches.
