The 2000 Chevy Corvette normal operating coolant temperature is 195 degrees. You can install thermostats that will allow the coolant temperature to only run at 180 degrees.

this is normal,because the coolant temp sensor is supposed to be in direct contact with the cooling fluid in order to read its temperature
I am an ASE certified technician. Your normal engine or coolant temp should be 190 - 210.
Low on coolant or a sticky thermostat, replace it.
Typically it is right around 200 to 210, and alot of that depends on where you are in the states and how you drive your Corvette. You can get alot of good ideas as to what others temps are running at in all different states over at Smokinvette.com.
