1080p 240hz is the better choice, the numbers 120hz and 240hz are the speeds in which the picture refreshs itself. Which means 240hz is going refresh 240 times per second which is twice as fast as the 120hz models.

The PS3 will upscale to 1080P if the system is set to upscale. You will not get 1080p you will get 720P upscaled to 1080P. I find that DVDs movies are better on the upscaled format, but they are not of the quality of Blu Ray.

Picture quality would a better way to state it. The best sets are the 1080i and 1080p type.
The difference between 720p and 1080p is in how many pixels are displayed across the screen horizontally and vertically. 1080p would have more pixels and thus the image on the screen would be clearer.
