for an iPod touch ,to change your passcode go to settings app and there should something called general. You click on it, then it should take you to passcode lock. From there you can chage your code. But if you already have a lock, you have to eneter it in. If you forgot this then you can take it to the apple store. Or plug it in to your computer and click on your itouch's name. There should be some tabs near the top. Find the right one and there should be a button that says chage pass code.
Go to settings>general>passcode lock Enter the passcode you already have set. Click change passcode and enter your old passcode. Carefully choose a new passcode and enter it. Then enter it again. To erase the passcode, click turn passcode off, and enter your old passcode.

Not individual games no, but you can passcode lock certain game ratings through parental settings or you can just put a passcode on certain accounts through account settings
You can lock your iPod Touch by simply pressing the long slim button (the "sleep/wake" button) at the top of the iPod. This will shut your screen off. If the sleep/wake or home buttons are pressed, you will see a screen with a lock symbol on the top bar. Slide the bar and enter your passcode if required to unlock.
settings/general/pass lock... once you get to the pass lock section enter your current passcode(if you have one), once in you can simply turn on or off the Simple Passcode option. if this option is on you only have a 4 digits passcode, when turned off you can make your super passcode with letters
