well they are all different sizes. they stopped making those 16 gb ones and brought in the 64gb. but if your not a music freak i would just get the 8gb nano. I wouldn't worry about spending 100 dollars extra . i got my 32gb iPod touch from Harvey Norman for $375.
The 32 GB iPod Touch is better because no matter how many songs and videos you have, be it hundreds or thousands, you will never have the problem with space on your iPod. Still, 16 GB is a A LOT of space, you'll be able to hold a couple thousand songs with a 16 GB iPod as well. There is also the factor of pricing.
