Sending a probe someplace like Mars, for example, lets us know what the surface conditions are like and what kinds of minerals and atmosphere we should expect to have available. Sending a man there without knowing those things ahead of time would almost certainly be suicide. It's really hard to come back if things don't work out.

The same goes for anywhere else in space.
