Follow the TOP radiator hose to the engine block Remove the hose from the engine block. Thermostat should pop out. Some screw in, most pop out.
According to Haynes Repair Manual #61042 for the years 1993 thur 2001 fot the Mazda 626 & MX-6 Ford Probe the engine thermostat is located on the driver's side of the engine compartment under the air breather. It is necessary to disconnect the ram-air hose & remove the air-filter compartment to reach the thermostat. The thermostat is held in place by two bolts & an "O" ring gasket. I had to replace mine & is took a "little while" to remove everything to get to the thermostat, replace the thermostat & then replace everything back in place as it was before.
follow the bottom radiator hose up to the engine and remove the two bolts an you should see it
The thermostat is under the air filter housing, which you need to remove to get access to the thermostat.

you have to remove the shroud for the fan it actually sits at the end of the radiator hose up against the motor. Doesn't look like it's there but it is so you have to remove a few things to get to it.
