Try playing a tape of whatever it is you want to learn, say lyrics to a song. The words need to be on repeat, Your hearing doesn't fully shut down during sleep, hence why you can hear fire alarms and can be woken up by them.
Your ears will pick up the words in order and as they are repeated they are more likely to be 'stored' in your mind.
It's like being told something again and again, eventually you will remember it.
You should be able to near instantaneously remember what the lyrics (example) are.
The only downside is you may find it hard to get out of your mind.
They're looking to see how quickly your heart is beating.
Learn it in small chunks. It helps alot if you do that and then get somebody to test you sentence by sentence

To learn 'by heart' means to memorize it so that you can recite it easily without having to struggle.
When a heart is looked at without using a microscope, the term grossly is used. It was not unusual in anyway (unremarkable). Looking at the heart, everything seems fine. But looking with a microscope may show some thing else.

If you are looking for something romantic to write you can not go wrong with Shakespeare, Shelly, or Browning. Something from your heart also works well because you really mean it.
To learn something by heart you need to repeat it often. Read it a couple of times and then cover it up. Try to say it back (or write it if that's more appropriate). Look back at the original as soon as you get stuck. Test yourself again without looking. Keep repeating this until you can do it without looking. It's not quick, but it really works. Test yourself again the next day, and at frequent intervals, refreshing your memory when you need to. If it's a very long piece split it into sections.
