What do you do in the coliseum in Kingdom Hearts?

If you mean the world, heres how.

You got to Traverse town, after you seal the keyhole in Wonderland. You go to the Gummi Ship menu. You then go to the next world. It will be the Coliseum. Then you talk to phil, who will show you what to do next.

In KH1, you just do tournaments and stuff, like fighting Titans and Hydras. But in KH2, you fight and go everywhere like Underworld where Hades is and stuff, so you can do much more in KH2.
