If you have KML content with lines/paths then Google Earth can plot an Elevation Profile for it.

By default the Y-axis of the chart displays the elevation, and the X-axis of the chart displays the distance.

To plot other values (e.g. heartrate, cadence, power, etc.) the geometry of the Placemark should be one of Google's KML extensions, namely gx:Track, where you can add those values in an ExtendedData tag with gx:SimpleArrayData.

Go to Edit > Show Elevation Profile, or right-click on your path from the Places panel and select 'Show Elevation Profile'.
