They don't.

Extinct animals are animals that are all gone, no living ones left.

So you can't poach what's not there.

But maybe you're wondering why people poach animals that are merely endangered - still hanging on in small numbers.

That's simple, either they think that their need - what they can gain from killing that animal - is more important than that species being around in the future.

Or they think that one more won't make any difference.
