Human beings are called omnivores because they are designed to eat both plants and animals (hence, omnivorous- able to eat both plants and animals). If a particular human happens to be vegetarian it does not mean that they are not omnivorous. The definition is based upon what they "can" (i.e what they are adapted through evolution to eat) , not what they "do " eat.
