The short answer is that mollusc don't have a endoskeleton.

An endoskeleton is what we vertebrates have - an internal skeleton.

An exoskeleton is a rigid external covering for the body in some invertebrate animals.

To define a mollusc, which includes: snails, slugs, mussels, and octopuses, the mollusc should be named specifically. For example, an octopus is not noted for being rigid, While a mussel has a pair of hard shells making it a shellfish - which also includes cockles and crabs, etc.
