Persephone held a pomegranate in her hand because that was one main part of the seasons. Persephone ate the pomegranate meaning that she had to stay in the underworld for 6 months, thus Demeter's creation of the seasons. When Persephone is in the underworld this creates Fall and Winter. When she is reunited with her child, this creates Spring and Summer.
Persephone ate the pomegranates because she was hungry. Had she not been a goddess, she would have starved to death.
There aren't any Greek goddesses associated with all of them. Apple- Aphrodite; when Paris awarded her with the apple Pomegranate- Persephone; when she ate the pomegranate Peacock- Hera; symbolizes her beauty and pride
Hades didn't force Persephone to marry him. Zeus (Persephone's Father) promised her hand in marriage to Hades, but he neglected to inform both Persephone and Demeter (Persephone's Mother) of this. Hades came to claim his bride, which turned into an abduction because Persephone didn't know about it. She was very mad and upset at him for a very long time, but I do believe that she eventually warmed up to him (since due to the eating of pomegranate seeds she spends half of the year with him), and I think she did marry him of her own accord.
His wife is Persephone, the goddess of springtime. She ate a pomegranate when she visited the underworld, and was then abducted by Hades. They later wed, and although Persephone is only in the Underworld for 1/3 of the year.
