That could be any of a large number of reasons. I would start by insuring spark plugs are in good shape, same for plug wires. Then I would suspect the fuel system. Dirty gasoline, water in the gas, etc... Measure your fuel rail pressure (assuming fuel injected). A failing fuel pump on an injected engine will result in a rough idle, lack of power/acceleration, and very poor overall performance Much the same could take place with a dirty fuel filter as well.
A failing pump will commonly "slow down" due to internal friction, and lower the rail pressure enough to cause a vapor lock condition in the fuel rail. This symptom if vehicle actually does run, usually gets worse as the vehicle warms up. I quick check would be when the symptom is present, shut the engine down, and immediately and carefully depress the shrader valve on the fuel rail VERY BREIFLY. if air (fuel vapor) comes out, this is likely your problem. But again only very briefly, gasoline landing on a hot engine could very easily start a fire! Thus a very quick pop of the valve is all you should need. There should be no air in it.
There are a number of reasons why a car would idle find but sputter when you accelerate. It could need a new spark plugs. You may also have to replace the filters. It might also be an issue with the air flow.

There could be several reasons that your 1995 Chevrolet pickup truck, will not accelerate and idles rough. The most common reason is a plugged fuel line.
sounds like a lack of fuel. 1st I would replace the fuel filter. If this does not help, have the fuel pump checked.

It may be a EGR valve issue. This valve is normally closed at idle and opens at about 40mph.

Have you checked the catylitic converter? Had a Datsun B210 that had the same symptoms. Took the converter out and the honeycomb would clog after 20 - 30 minutes driving. Just a thought!
A problem with the fuel system. I'm assuming the fuel pump or carburetor/fuel injectors. I had a 1987 Pontiac Firebird that would sputter for a few seconds when you pressed on the gas pedal. Never got it checked though but I assume that would be the problem.
