I have a 1996 Monte Carlo Z34, and I've noticed that the fuel gauge reading will bounce around whenever the car is tipped up or down as the fuel sloshes around in the gas tank.
A mechanical oil gauge may bounce if you are low on oil. An electric oil gauge may bounce if the sending unit or the gauge itself is faulty and of course you are low on oil.

It is most likely the fuel sending unit in the tank, they either make the guage go past full or all the way empty. If the guage is bad it might bounce or have false readings
