The 2000 Dodge Caravan oil sending unit is located on the bottom of the engine. It is on the front on a six cylinder, and the rear on a four cylinder.
It is the two wire sensor near the thermostat housing.
The oil pressure could be dropping. Or, the sending unit could be going bad or have loose wiring. Check the wiring and the sending unit. It will take an oil pressure gauge to check that the pressure is correct.

I'm not 100% positive but odds are the problem is a resistor on the sending unit which unfortunately is likely located in the gas tank on that and most newer cars, you would have to change the sending unit.

The 1997 Dodge Dakota oil sending unit is in the oil pan, on the bottom of the engine. You will need to remove the oil pan in order to view the sending unit.
