The shop I've been using is still putting 10 W-40 in all the vehicles they service. They had a lot of it on hand. There seems to be a movement to a 5 weight oil lately. It will work fine too.
Go with your oil change shop's recommendation and remember that the most important thing is to change your oil often! Some fanatics will tell you to change it every 2000 miles. I try to do mine every 3000 miles and never longer than 5000. (5000 is a stretch. Try for 3000)
For what it's worth, my last oil change was when the car's odometer read 210,000 miles. It's a '96 and still runs great. My last mileage check was 29.8 miles per gallon. Your '04 can last you a long time with proper maintenance.

Dexron 3 Wrong. Dex 3 is transmission fluid. Propolyene Glycol is antifreeze. Any good universal A/F is fine for this car.
It should be perfectly happy with 10W30. Many oil change places are now using 5W30 as their default. My '96 ran just fine with that too.

The Oil Filter is on the top of the engine, to the left of the valve cover. It has a plastic cap that can be wrenched off. The Oil Filter is not a sealed filter that you are used to seeing. It drops in where you removed the black cap.
Yes, the back seats in a 2004 Sunfire do fold down. There are straps on the back of the seats that are used to pull the seats down. The straps are assessable through the trunk of the car.
