The 1989 Chevy Caprice 305 V8 does not have a carburetor. It is equipped with Throttle Body Fuel Injection which may look like a carburetor but is not.
Its on the right side of the throttle body. The throttle body is behind the black housing in the middle of the engine that says something like 4.7 V8. The throttle body sensor is the one on the top of another sensor that is on the right side of the throttle body.
Sounds like the throttle sensor, throttle body needs to be replaced.

Try cleaning the throttle body (you can get throttle body cleaner in virtually any auto parts store), looks like you have problems with idle control valve to throttle position sensor. Both of them are located at the throttle body.

If it goes dead when under load like a/c kicks on, then it's highly likey that you need to clean the throttle body. The throttle body is simple to remove. Use throttle body cleaner and clean the back and all ports. Always disconnect the batter before removing throttle body, it will mess up electronic memory if you don't.
