The combustion process cause the engine to heat up.
It's normal for a vehicle to drop out of overdrive when it's under a severe load like going up hill or a lot of weight in it. That helps the engine to maintain speed and keeps the transmission from running hot. The ECM moniters the actions of the car and driver inputs and makes a decision automatically.
Turbos use hot exhaust gases to spin the turbine wheel when the engine is under extreme loads(think a big truck going up a steep hill)the exhaust temperatures rise which makes the turbo work harder these raised exhaust temps (on long haul trucks max exhaust temp before the engine must be down rated is 650 to 750 degrees Celsius) it is these temperatures that cause the turbo to glow red hot

when your engine is hot it causes the water to boil and the water and the anti freeze will come out of the overflow pipe.
NO! Because the coolant on a hot engine is VERY hot and under pressure, you risk SERIOUS injury if you open the cooling system on a hot engine. If you are going to be working on the cooling system, you should allow the engine to cool to ambient (or at least near ambient) temperature.
Coolant level is most likely low and going up hill allows it to reach the heater core.
