More than likely one or more of your sender units, relays, or guages have gone bad. When they flip to an extreme and then go back to normal operation it is typically in indication of a faulty guage or sensor. The sensors aren't terribly hard to replace, but can get a little pricey. If you have no check engine light, have a dealer check it out. If you do have a check engine light, take it to advance auto and have them run the diagnostics for you and see what codes it spits out.
