It sounds like your vacuum controls are stuck on the defroster I had that happen and I sprayed a lubricant into the vacuum lines and it cleared up
With most vehicles the HVAC controls are operated by vacuum. If the vacuum supply is cut off the system defaults to the defroster mode. My guess is you have a vacuum line pinched, cracked or disconnected under the hood.

Now, when you accelerate fast, the throttle is wide open, and there is no vacuum, or it is very low, so with low vacuum the control reverts back to defrost. It would be the same as if you un hooked a vacuum line and did not feed your dash controls, you would only have defrost.

The AC is probably coming through the defroster because the air door is stuck. The door is behind the dash and is vacuum controlled. A vacuum leak or bad door will cause this problem.
