There are 3 (1 per 2 cylinders)if you have a 3.1 V6. They are under the exhaust manifold closest to the front of the car. Follow your plug wires and you will find them.
Chances are that you only have one defective coil so try to narrow it down by pulling plug wires at the coil pack while the engine is idling. The defective coil will have no effect when its' plug wires are pulled.

if it is a 4 cylinder it is undder the intake i am lie 90% sure if it is a v6 it in the front passenger side of the engine compartment
Very likely it's low gas pressure or a bad coil pack. There are three coil packs on the left side of the engine. I had one go bad on my Grand prix and it had similar symptoms.

On the 91 ponitac gran pix 3.1 it on the front of the engine under the exahust manifol, or you can follow the spark plug wire down to it.
A 2000 Pontiac Grand Prix (with either the 3.1L or 3.8L V6 engine) has 3 coil packs. (Each coil serves 2 cylinders). Note however, the coils for the 3.1L and 3.8L are different.
