As to how difficult the job is will depend on which engine you have. There's a whole lot more room to work with the 3.0 "Vulcan" as compared to the 3.0 Duratec.
Basically an EGR has a vacuum hose or 2, maybe a sensor wire connector, 2 mounting bolts and a metal pipe connecting into the bottom. Not bad if you have some room for wrenches.
By the way, I have uselessly replaced 2 EGR valves based solely on having my codes read by a no-nothing clerk at a major auto parts chain store.

The PCV valve is located on the back side valve cover. It should be a plug in type and easy to change.
The 1989 Mercury Sable 3.0 liter engine EGR valve is located on the firewall. The valve will be on the passenger side of the firewall.
The 2001 Mercury Sable PCV valve can be found on top of the engine. The PCV valve will be on the back side of the air cleaner housing.

The only way to change the plugs is to remove the top cover first. Then remove the cover for each plug.

I was looking at one of the Ford websites and it shows that for a 2001 Mercury Sable 24 valve ( the " Duratec " ) and for the 12 valve ( the " Vulcan " ) they both use ( 1 ) coil pack that has six towers on it ( both engines use the Motorcraft DG-485 ignition coil pack )

You don't, It is totally controlled by the PCM using the IAC valve.
what year, and which engine? Note: if it is newer year, there are two 3.0 liter engines, a 24 valve and a 12 valve. 2000 3.0 liter engine 24 valve
