Your best bet is to follow the recommendations set forth by Chevrolet, you can find these in your owners manual or by calling your local Chevrolet dealer. There is probably a Change Oil light that will illuminate when it is due for an oil change. edit: Do not wait for a light to come on. That is simply a reminder to prevent you from going longer. Chevrolet recommends using a synthetic blend SAE 5W30 oil, replace every 3,000 miles or 3 months.
Maybe one of these videos can help you: http://www.sutree.com/Learn.aspx?q=change+oil+in+chevrolet

Evidently the oil level was low before you changed oil and was full thereafter.

Yes, there is no reason you should not be able to change the oil by yourself in a 1996 Chevrolet S10.

An 8 cylinder Chevrolet Silverado needs 5 quarts of oil for an oil change. This includes the small amount of oil stored in the oil filter when changed.
If it it a change oil light it is telling you it is time to change the oil. There should be another light that is the oil pressure light.
