Hey man, I've got the same truck, and the Fuel filter is in the tank, at the bottom of the fuel pump, its a pain to get to considering you have to drop the whole tank. Mine has clogged up numerous times, and it just dies. So check that out.
You also may want to check the IAC (Intake Air Controller) located at the back of the intake plenum, drivers side. Two torx #25 screws hold it in. Mine did the same thing (95, 5.9L) at idle and when stopped at a light. It was actually broken, but they also have a tendency to get carbon fouled. Give that a shot if it is not a fuel filter issue. Not too expesive (@ $45 at O'Reillys) if cleaning it doesn't work..
You could have clogged fuel injectors or the timimg chain could have jumped
