If you are referring to the Monday after Easter, yes, FedEx will deliver on this day. The only days that FedEx will not deliver on are Christmas Day, New Years Day, Thanksgiving (Thursday, they'll deliver the Friday afterwards), Independence Day (July 4th), Memorial Day, Labor Day, and I believe one more day which I can't recall offhand.
Also, depending on the market, FedEx may, or may not, deliver on Saturday or Sunday.
