Oat soluble fiber mixes with cholesterol-based bile acids in the digestive tract and prevents them from being absorbed. The oat fiber then carries them out of the body. In response, the liver pulls cholesterol out of the bloodstream to replace these bile acids. Cholesterol levels then drop.
