This is a tricky question. Really depends how one prepares the fowl; but what cooks at home need to know, is internal temp of at least 165'.

If it's a whole chick, check temp in the thick area of the leg-quater.

i my self fry chix at 325', slow and low, doesn't dry the meat out, more moist too..

I preheat oven to 200degrees. Spice the chicken and cook UNCOVERED for 20 mins. Remove from oven and pour over your sauce. Cover it, return it to oven and now set the oven to 180 degrees. Cook for one hour on middle rack!

When done this way, you get a crispy skin on the chicken and a very soft inside.
