Both a key and a cipher are required. Many are available, and range from quick and easy to use (but have little security), to relatively secure simple relatively simple systems, to those that absolutely cannot be broken.

Usually you just need a cipher and a key.

Normally, you would use some encryption software. If you use TrulyMail as an email client, encryption is done automatically. If you use Thunderbird, you would need to use an add-on like enigmail.

There are many email clients which support encryption. TrulyMail has built-in support for it. Thunderbird has add-ons you can add (enigmail) which will do it. You can also use stand-alone encryption products like PGP and manually encrypt in any email client or webmail.
