Mostly in the Southwestern US . The wood is burned to cahrcoal, or if you can get mequite wood, well dried , add to your barbecue til white hot, then lay coals on top to get that smoky mesquite flavor.
Well, you can get them with mesquite or without. If you don't want mesquite get the ones that say NO MESQUITE.
There is no best charcoal for everyone. It all depends on your preference whether you want just plain charcoal, mesquite flavor, wood chip flavor or some other flavor. Yes there are some brands that are easier to light then others but it still is up to your choice.
