The macapuno is a mutant of the coconut. Until I had to write this piece, I thought that the macapuno fruit is just an abnormal outgrowth of the regular coconut tree as I had learned as a child. Not anymore, the Philippine Coconut Authority corrected me. The Authority has developed macapuno trees that yield 80 per cent macapuno fruits. The trees grow in abundance in Albay where the Authority's research center is.

Macapuno is a type of coconut in English that contains a jelly-like flesh instead of the typical coconut flesh. It is often referred to as "coconut sport" or "mutant coconut" due to its unique texture and taste.

Dr. De Guzman was lauded for her outstanding contribution on the growth and development, in vitro, of the makapuno coconut embryo, resulting in a faster propagation of pure macapuno trees. As a result of this effort, she has revolutionized the old ratio of the makapuno-bearing nuts in the tropics which produce only 3-5 makapuno nuts in every raceme bearing 14-19 nuts. Dr. de Guzman produced 100% all makapuno-bearing in the raceme. Aside from these, she is also recognized for devising tissue culture techniques for rapid propagation of abaca and banana. For her achievements, Dr. De Guzman was awarded the following:Rizal Pro Patria award, 1976; SEARCA professional Chair in Plant Physiology, 1974-1976;Outstanding Scientist Award of the Philippine Association for the Advancement of Science, 1976;Professional Award for agriculture of the UP Alumni Association, 1977.
We asked 350 Filipino Teenagers about which do they prefer to eat during summer. Most of them said that halo-halo and ice candy are the best dessert to eat during the blazing heat of summer. 50% of the 350 Filipino Teenagers prefer to eat halo halo during summer. Halo halo mean mix mix. It is mad of corn ears, purple yam jam, ice, boiled kidney beans, garbanzos, sugar palm fruit (kaong), coconut sport (macapuno), and plantains caramelized in sugar, jackfruit (langkâ), gulaman, tapioca, nata de coco, sweet potato (kamote), cheese, pounded crushed young rice (pinipig). Another 48% of the 350 Filipino Teenagers prefer to eat ice candy during summer. It is similar to an ice pop, except we do not use sticks. Instead, an ice candy bag is used and the treat is frozen.
Emerita V. de Guzman, a renowned Filipino scientist, made significant contributions to the field of biology through her research on plant physiology and micropropagation techniques. She played a crucial role in the development of tissue culture protocols for the mass propagation of economically important crops such as mango and banana, revolutionizing agriculture in the Philippines. Her work has had a lasting impact on the agricultural sector and has helped improve food security in the region.
