If the meet has been kept refrigerated it is OK to eat, indeed meet (especially beef) should be kept some time (3-4 weeks) between being killed and sold to eat as this makes the meet tender and improves the flavor - this is called hanging the meet. However, please understand that when meet is hung is is kept so that it is still fresh - it is not the same as meet that has been kept at room temperature for a month which would be bad, taste and smell terrible and probably poison you if you ate it.
There are also other ways that meet can be preserved so that it lasts for a month or longer - freezing the meet will do this as will drying the meet (jerky) or salting the meet (as in bacon, salt beef or salami). Smoking meet also helps to preserve it.

It depends on your prefered place you would like to dine at (some places have different styles of cooking it) but typically white rice is healthier than pork. That is, if you need more protein and other fatty (yet healthy) nutirents, than pork is better.
Some common Chinese cuisine found in America are chicken/pork fried rice, white rice, lo mien, General Tao's Chicken and pork dumplings. Those are the only ones I can think of off the top of my head. hahaha
